Open Faced Irish Green Eggs and Greens

One of our favorite sauces to add to scrambled eggs is MOB Peruvian Verde Sauce.  The creaminess of this sauce creates a perfectly creamy consistency without the addition of cheese or heavy cream. Read below to learn how we made it. 


  • 1-2 slices Sourdough bread
  • Butter
  • 2 eggs
  • 2 TBSP MOB Peruvian Verde Sauce
  • Salt and pepper to taste
  • Cherry Tomatoes, sliced in half 
  • Cilantro for garnish

Optional Additions: 

  • Boursin cheese
  • Cream cheese
  • Smoked Salmon
  • Sautéed spinach


  1. Butter the bread o both sides. Heat a pan over medium-high heat and sear both sides until golden brown and crispy.
  2. Whisk the eggs in a bowl and add the verde sauce and a few pinches of salt and pepper. 
  3. In the same pan, add butter and turn the heat to low. Pour in the eggs and scramble.
  4. Assemble the toast by topping it with eggs and all of the additional ingredients of your choice.
