Irish Potato Nachos with Creamy Cilantro Lime Sauce

What's are Irish Nachos?

Nachos made with potato chips instead of tortilla chips. Honestly, it’s a genius idea.  Thank you Irish friends! Here’s how we made. 


  • Potato chips
  • Canned black beans, rinsed and gently heated in the microwave
  • Mexican-style shredded cheese
  • Cheese sauce- like Tostitos nacho cheese sauce melted for pouring over the top
  • Salsa
  • Avocado, diced
  • Scallions
  • Sour cream
  • MOB Peruvian Verde Sauce
  • Limes, quartered
  • Pickled jalapeños


  1. Preheat the oven to 400 degrees. 
  2. Place chips in a cast iron pan. Add the black beans and shredded cheese. Place in the oven and bake until cheese is melted, 5-8 minutes. Remove from oven. 
  3. Meanwhile, place sour cream in a small serving bowl and add verde sauce to taste. Set bowl in the middle of the cast iron pan. 
  4. Add your toppings. You may notice there aren’t any amounts listed in the ingredients section. This is so you can add how ever much you deem necessary for this dish. 
  5. Serve and enjoy!
