For this quick potato casserole recipe we are using premade mashed potatoes. You can always make your own from scratch, but for this version, we are making it quick and easy for you.
Ingredients:
20-24 oz premade mashed potatoes
2 eggs
1 cup cheddar cheese
2 cups kale, destemmed
2 Tbsp MOB Chilean Chimichurri
Method:
1. Preheat the oven to 400 degrees.
2. Bring a large pot of salted water to a boil. Add the kale to the pot and boil until al dente, 3-5 minutes. Remove and coarsely chop.
3. Place potatoes in a medium sized bowl and add the eggs, 2/3rds cup of cheese, kale and chimichurri sauce. Whisk to combine.
4. Place contents in a casserole dish and sprinkle with remaining cheese.
5. Bake in the oven for 15-20 minutes or until cheese is golden brown.
