Whole Roasted Cauliflower with Cheesy Verde Sauce

This whole roasted cauliflower makes for a stunning and delicious centerpiece for your Saint Patricks Day meal. Here’s  how to make it:

Ingredients: 

1 whole cauliflower head (Green for Saint Patty’s day if you can find one)

Salt and Pepper

Olive oil

4 ounces cream cheese, softened at room temperature

2 Tbsp milk or heavy cream 

2-3 Tbsp MOB Peruvian Verde 

Chopped cilantro

Method: 

  1. Preheat the oven to 425 degrees.
  2. Trim and remove the outer stem and hard leaves of the cauliflower. 
  3. Bring a large pot of salted water to a boil. Place whole head of cauliflower in the pot and boil for 7-10 minutes. Remove and shake off excess water. 
  4. Place the cauliflower head onto a sheet tray and and season with salt and pepper. Drizzle generously with olive oil to coat the entire outside of the florets. 
  5. Place in the oven and bake until golden, 10-15 minutes. 
  6. Meanwhile, place the cream cheese, milk or heavy cream and verde sauce in a bowl. Whisk to combine. Place in the microwave for 30-45 seconds or alternatively on the stove top until melted. You want it to easily pour over the top of the cauliflower. 
  7. Remove the cauliflower from the oven and place on a platter.  Pour the cheese sauce over the top and sprinkle with cilantro to garnish. 
  8. Serve and enjoy!
