Ingredients You’ll Need

To make Huevos Rancheros, you’ll need the following ingredients:

– 4 Eggs, cracked in a bowl

– 4-6 Tortillas

– Black Beans

– Choose Your Vegetables- sliced onions, mushrooms, zucchini, kale, carrots, cauliflower….. the options are endless. Ideally, use what you have in your vegetable drawer. 

– Salsa

– Cheese

– Avocado

– Cilantro

– Salt and pepper

– MOB Peruvian Verde Sauce

– MOB Special Fry Sauce- Choose your flavor

Step-by-Step Cooking Instructions

Follow these simple steps to make Huevos Rancheros: 

Preheat oven to 350 degrees. 

1. Heat a skillet over medium heat, add oil and fry tortillas until crispy and golden on both sides. Place on a cutting board and cut into triangles. 

2. In another skillet, saute the vegetables until al dente, keeping them a little crisp so they don’t turn to mush in the oven. 

3. In a large casserole dish assemble the Huevos Rancheros by layering the tortillas, beans, eggs, vegetables and cheese. 

4. Place casserole in the oven and back until eggs are slightly running, 15-20 minutes. Remove from oven and top with remaining ingredients. Be sure to slather the top with MOB Peruvian Verde Sauce. If you like a little spice, add our Special Fry Sauce! 

5. Season with salt and pepper to taste.
