This whole roasted cauliflower makes for a stunning and delicious centerpiece for your Saint Patricks Day meal. Here’s how to make it:
Ingredients:
1 whole cauliflower head (Green for Saint Patty’s day if you can find one)
Salt and Pepper
Olive oil
4 ounces cream cheese, softened at room temperature
2 Tbsp milk or heavy cream
2-3 Tbsp MOB Peruvian Verde
Chopped cilantro
Method:
- Preheat the oven to 425 degrees.
- Trim and remove the outer stem and hard leaves of the cauliflower.
- Bring a large pot of salted water to a boil. Place whole head of cauliflower in the pot and boil for 7-10 minutes. Remove and shake off excess water.
- Place the cauliflower head onto a sheet tray and and season with salt and pepper. Drizzle generously with olive oil to coat the entire outside of the florets.
- Place in the oven and bake until golden, 10-15 minutes.
- Meanwhile, place the cream cheese, milk or heavy cream and verde sauce in a bowl. Whisk to combine. Place in the microwave for 30-45 seconds or alternatively on the stove top until melted. You want it to easily pour over the top of the cauliflower.
- Remove the cauliflower from the oven and place on a platter. Pour the cheese sauce over the top and sprinkle with cilantro to garnish.
- Serve and enjoy!
