One of our favorite sauces to add to scrambled eggs is MOB Peruvian Verde Sauce. The creaminess of this sauce creates a perfectly creamy consistency without the addition of cheese or heavy cream. Read below to learn how we made it.
Ingredients:
- 1-2 slices Sourdough bread
- Butter
- 2 eggs
- 2 TBSP MOB Peruvian Verde Sauce
- Salt and pepper to taste
- Cherry Tomatoes, sliced in half
- Cilantro for garnish
Optional Additions:
- Boursin cheese
- Cream cheese
- Smoked Salmon
- Sautéed spinach
Method:
- Butter the bread o both sides. Heat a pan over medium-high heat and sear both sides until golden brown and crispy.
- Whisk the eggs in a bowl and add the verde sauce and a few pinches of salt and pepper.
- In the same pan, add butter and turn the heat to low. Pour in the eggs and scramble.
- Assemble the toast by topping it with eggs and all of the additional ingredients of your choice.
